Information On Deer Hunting

As you can see by my name, I am interested in Meat Proccesing. I am looking to open a small butcher shop in my town when I'm a little older, and I was wondering if anyone here could give me advice on the meat industry. If you have worked in a slaughter house, or have/had your own butcher shop, please reply with what meat you processed/butchered, and how you did it. If you want, you can email me also. I know I'm probably going to get some replys like 'Why are you so mean!', but I'm not. It's the same as wanting to grow up and be a model. I just want to work with meat, and giving people the best eating experience.
Thanks for reading. And any other information regarding slaughter house requirements/rules are welcome! (Also, are there any laws that you must follow to be able to run your own butcher facillity? Can I hunt deer and/or other animals and then sell the meat in my own butcher shop?)
I worked in a butcher shop as a kid. Really makes your neck sore bending over a bench all day. Also you go home smelling like meat, hard to wash away.
